🌮 Braised Short Rib "Tacos"
  • The Setup: 2 lbs bone-in short ribs, 1 can lager beer, 1 jar chipotle salsa, 1 onion (chopped).
  • The Cook: Sear ribs heavily in a Dutch oven. Remove ribs, sauté onions. Return ribs, add salsa and beer. Cover and roast at 325°F for 3 hours until falling off the bone.
  • The Assembly
    Shred meat. Serve on charred mini flour tortillas with thin radish slices and fresh lime.
🌽 Sunset Blvd Street Corn Dip
  • The Base: 2 bags frozen roasted corn (Trader Joe's), 1 jalapeño (diced), 8oz cream cheese, 1/2 cup mayo, 1 cup Cotija cheese.
  • The Method: Sauté corn and jalapeño in a skillet until hot. Lower heat, stir in cream cheese and mayo until melted. Fold in half the Cotija.
  • The Finish
    Transfer to a baking dish, top with remaining Cotija. Broil for 3 mins until bubbling. Dust heavily with Tajín. Serve with thick tortilla chips.
